๐Ÿ›’ Ingredients (for 6 servings)
  • 1 liter grape must (filtered and clean)

  • 100 g all-purpose flour

  • 50 g cornstarch (optional, for a smoother texture)

  • 1 stick of cinnamon or 1 tsp ground

  • 3โ€“4 cloves

  • 2 tbsp toasted sesame seeds

  • 2 tbsp chopped walnuts

  • Optional: 1 tbsp honey for serving

Mustalevria is one of the most traditional autumn sweets of Samos, made with fresh grape must โ€” especially from Muscat of Samos grapes, known for their intense aroma and sweetness. Itโ€™s a sweet, aromatic, nostalgic dessert, with roots dating back to ancient Greece.


๐Ÿ‘จโ€๐Ÿณ Instructions
  1. Prepare the must
    If your grape must is fresh and unclarified, you must treat it with wood ash and boil it lightly before filtering (clarification).

  2. Mix and heat
    Dissolve the flour and cornstarch in a bit of cold must to avoid lumps. Add to the rest and heat over medium, stirring constantly.

  3. Spice and thicken
    Add the cloves and cinnamon. Stir until the mixture thickens and holds onto the spoon like a pudding.

  4. Serve
    Remove the spices. Pour the cream into bowls or plates. Sprinkle with sesame seeds, walnuts, and optionally, a drizzle of honey or extra cinnamon.
